Pasta Dough


  • 5 eggs
  • 5oog zero fine flour (pasta flour)


Put the flour in the bowl and make a well in the middle.

Add the eggs to the well.

Using a fork gradually bring the flour in to the eggs and mix.

Once the mixture is combined kneed it in the bowl for 10 minutes until it is soft and smooth.

Making the Pasta

take a small piece of dough and make sure it's not too sticky (if it is add some flour to the machine and the dough)

It should be no thicker than 1cm. run this through the pasta machine on the widest setting.

Fold it in half and repeat.

Do this for a total of eight times before changing the setting down to be slightly narrower.

Now run the pasta through each of the other settings once. 

You want the pasta to be thin and shiny without ripping.
