Tomato Baked Eggs

Ingredients (Serves 2)

  • 1 red onion
  • 1 clove of garlic
  • 4 eggs
  • 2 tin of tomatoes
  • 200g spinach
  • Coriander
  • 1 teaspoon Ras el Hanout
  • 1 teaspoon harissa spice
  • 1 teaspoon Chilli flakes
  • 1 teaspoon Paprika

Method

Cook the onion and garlic on a medium heat in a little oil until soft and then add the spices. 

Pour inthe tomatoes and cook for 5 minutes before adding the spinach.

Once the spinach has wilted make four wells in the mixture with the back of a spoon and crack the eggs in to each well. 

Season with salt and pepper and put in the oven to bake until the eggs are set. Alternatively put a lid on the pan and leave to cook on the stove.


Great served with chunky bread or a dollop of natural yoghurt.
