heat the oil in a pan and add the finely chopped onion and garlic, cook on a low heat until soft.
Finely chop the herbs and add to the pan.
Then add the washed tomatoes whole, dont bother to chop them.
Season with salt and pepper and add the chilli and paprika.
Leave to simmer on a low heat for 45minutes stirring occasionally until all the tomatoes are broken down.
Once the tomatoes are broken down you should be left with a thick lumpy sauce.
Leave to cool before blending to a smooth sauce. I use the skins in and blend with a milling blade to ensure they are blended properly. Alternatively you can sift the sauce for a really smooth texture.
If you are using the sauce straight away grate in 2 tablespoons of parmesan for a rich flavour.
This sauce can be frozen and tastes great stirred through pasta.
